It starts with home-marinated salmon with wild garlic crème fraîche and

trout caviar on crispy pumpernickel earth, followed by an aromatic

tomato consommé with ricotta ravioli and basil

For the main course, we serve braised shoulder of lamb and pink roasted

rack of lamb with rosemary jus, fresh spring vegetables and potato

wild garlic gratin
.

The finale is a lemon and basil tartlet with strawberry

rhubarb compote, yoghurt ice cream and almond brittle.
